How To Make a Chicken Tortilla Soup From Scratch

Chicken tortilla soup is a popular Mexican-inspired recipe made with chicken and crispy tortilla chips. It has a tomato-based broth seasoned with chili peppers and various herbs, giving it a flavorful and slightly spicy taste.

Cooking The Chicken

Place the 2 small chicken breasts, 2 carrots, 1 large onion, 2 bay leaves, 2 garlic cloves, and 1 tablespoon salt in a large stock pot. Pour enough water to cover the ingredients by 2 inches.

Bring the water to a boil over medium-high heat. Once it reaches a boil, reduce the heat to low and simmer the chicken for 30-40 minutes or until it is fully cooked and no longer pink inside.

Once the chicken is fully cooked, remove it from the pot with a slotted spoon and place it on a plate. Allow chicken to cool down; shred it with your hands or use two forks and reserve for serving. Strain the chicken stock and set aside.

Place the 3 ripe tomatoes cut into chunks, 2 chipotle chili peppers, 2 peeled garlic cloves, and 1 small onion cut into chunks in a blender. Add spices such as cumin powder and oregano according to your taste.

Preparing The Flavorful Tomato-Base Broth

Pour 1 ½ cups of the chicken stock you reserved before and blend until you have a smooth sauce. Strain the sauce into a bowl to remove any remaining solid bits.
